Efficient new emulsion process could have "major impact" on food industry

A new process produces oil-in-water emulsions using rotating membrane emulsification. If it can be scaled up, the more energy-efficient process could have "a major impact on the food industry," said Dietrich Knorr, section chair at the eighth European Workshop on Food and Technology.
