Restaurants can get greener, buy fresher, drive less

Logistically, one of the key ways restaurants can go green, especially now that gasoline prices are soaring, is to buy fresh produce closer to home. Transportation makes up about one-fourth of the country's greenhouse emissions, says Bill Roth, an expert in sustainability marketing and green industry practices.
