Spaetzle, small droplets of dough that resemble noodles or dumplings, can be the base for a rich, hearty dish when combined with a bacon-and-mushroom sauce and baked with freshly grated Gruyere cheese or turned into a lighter summertime dish with asparagus and roasted cauliflower. "It's like pizza, you just have to figure out what toppings you want," said Dominique Geulin, chef-owner of St. Honore Boulangerie in Portland, Ore.
