The 60 salad recipes in Andrew Swallow's "Mixt Salads: A Chef's Bold Creations" combine fresh, locally sourced ingredients using recipes that work in a fast-casual setting. Swallow is co-creator of Mixt Greens, a fast-casual concept that practices what his book preaches. "They're not eating prewashed greens thrown into a bowl and loaded up with some overly sugared dressing.
