Sao Paolo, Brazil, is home to Barry Callebaut's first Chocolate Academy in South America. The new center will specialize in chocolate and hopes to encourage the exchange of expertise in techniques, trends and recipes among culinary professionals at all levels. "Many Brazilian chocolate experts travel to Europe and North America to take courses. Now they can find a high-level place around the corner, here in Brazil," said Bertrand Busquet, French chef and the Academy's technical adviser.
