Buckwheat is a naturally gluten-free grain that does not get enough attention, writes public health expert Elaine Gordon. Buckwheat is a good source of fiber, iron, calcium and other good stuff, she says, and buckwheat flour can be made into soba noodles or pancakes. Gordon advises shoppers to read labels carefully, as some soba noodles also contain wheat.
