Convenience stores geared up for change several years ago, turning to prepared food and beverages in a big way to offset falling cigarette sales. At companies including Tyson Foods and Insight Beverages, the trend opened up new opportunities for product innovation. "All things begin with consumer needs. There’s been a huge move toward handheld snack foods. First it was chicken tenders, then boneless wings -- there’s been a great demand for that product," said Tyson's T. Fuqua.
