Chefs, consumers must work together for change

Chefs have an obligation to consider consumer health and wellness as well as sustainability when populating their menus, but the responsibility doesn't fall solely upon those in the kitchen, writes Greg Drescher, the vice president of strategic initiatives at the CIA. Americans need to take more ownership for their food choices when dining out -- only 20% consider nutrition when ordering at a restaurant -- and support chefs who are leading the fight for safe, sustainable food.
