Innovation flows from coconut water

As the popularity of coconut water grows, companies are using it in fruit pops, coffee, smoothies and sports drinks. Nestle has introduced Dreyer's Outshine Coconut Waters frozen fruit bars, while Big Tree Farms has developed powder that can be added to coconut water to boost sports recovery. Innova Market Insights says products containing coconut or coconut flavor increased 21% last year compared with 2011.
