Food chains walk a fine line to healthier menus

Boston Market didn't make a big announcement when it cut the amount of salt in its mashed potatoes and other side dishes, opting instead to wait until customers seemed to accept the tweaked recipes. The company and others, including McDonald's and Kraft, often make such changes quietly amid concerns that the public will see healthier offerings as less tasty.
