School nutrition professionals in a Mississippi district are working this summer to conduct taste tests of 73 of the 500 recipes included in the state's Mississippi Recipes for Success program. Healthy entrees and side dishes that taste testers reject will be altered to be more appealing, officials said. Doris Schneider, executive secretary of the Mississippi School Nutrition Association, was there to observe during the taste tests. "I'm interested in how they are preparing these recipes in the school district, and in seeing them in action," she said.
