Specialty cheeses the new face of Wisconsin cheese

Wisconsin, the state made famous for its cheese, will use innovative, unusual and expensive new products to keep its cheese-king title even after California surpasses it in total cheese output. Because they know "that we're going to lose [the] quantity race," said Jeanne Carpenter of the Dairy Business Innovation Center, the cheese producers would rather focus on quality.
