Newest foodservice trend: Snacking

The top 100 foodservice chains generated more than 50% of the restaurant industry's $350 billion in sales last year, with beverage concepts leading in sales growth (up 21% from the previous year), followed by bakery-cafes (up 13%), Technomic reported. With sales growth slowing in the limited-service restaurant category, some chains are looking toward the "fourth daypart," snacking, to boost sales.
