Six Brooklyn chocolate companies are on the cutting edge

Six chocolate makers in Brooklyn, N.Y., are on the cutting edge of the industry, making raw chocolate, fair-traded confections and bean-to-bar chocolate. They include artisan chocolate maker Jacques Torres Chocolate, Mast Brothers Chocolate, Nunu Chocolates, Cacao Prieto, Raaka Chocolate and Fine & Raw Chocolate Factory. “In the culinary world ... everyone wanted to develop a personal connection with their food, like where did that heirloom tomato come from, or how was that cow raised?” said Rick Mast of Mast Brothers Chocolate. “But chocolate seemed to bypass that criterion.”
