Study: Sesame protein in cheese could aid Chinese consumption

Sesame proteins can reduce the milk protein in soft cheese, according to a study in the International Journal of Food Science & Technology. The proteins, already commonly found in Asian dishes, could help boost China's cheese consumption and dairy industry, researchers say.
