Michel Nischan of the Dressing Room restaurant in Westport, Conn., says hamburgers can be ecologically friendly when made with local grass-fed meat and topped with local heirloom tomatoes and cheese from nearby grass-fed dairy cattle. "The immediate reward is [flavor]. The ultimate reward is a better world," he said.
