Janice McEachen's role at the Ocean House in Watch Hill, R.I., is to "forage" for food and lead the culinary education program. She said much of her job involves facilitating fresh ingredient arrival. "As a chef, you don’t have time to drive around everyday and pick things up, and as a farmer you can’t get all over the state every day. It’s a lot of coordination between the different farms and our chefs," she said.
