Restaurant chains see nontraditional locations including campus dining halls as growth spots with relatively low entry costs and steady streams of regulars, qualities that haven't escaped the notice of a growing number of food trucks rolling in to capture some of the business. Some restaurateurs are defining the word "nontraditional" more wildly, with eateries opening in renovated shipping containers.
