Restaurants keep their menus changing with the times

Pittsburgh, Pa.-area restaurants that once augmented their regular menus with a few daily specials are now changing things up weekly, giving chefs a chance to try new techniques and patrons a reason to come back more often. "We keep a dish on the menu for about two weeks, based on where we source things," said Dustin Gardner, sous chef at Casbah.
