Chains get flexible with service to boost sales

Fast-casual chains including Mama Fu's, based in Austin, Texas, are morphing into flex-casual concepts that offer table service in the evening to boost dinner sales. “When we started this [concept], the immediate feedback was very positive. It attracted more families at night and increased our ticket average from about $14 to $20," said CEO Randy Murphy.
