USDA chief: Meat production clean, safe

USDA chief Ed Schafer has visited several meat processing plants in Nebraska -- including those of Cargill Meat Solutions and Omaha Steaks -- and said they were sanitary and safely operated. He also believes that Nebraska Beef Ltd., which last week recalled meat associated with E. coli infections, should be held accountable for the tainted products and not the USDA. The agency is working to determine the source of the contamination, he added.
