Fast-casual Italian chains are popping up around the country as parent companies Fazoli's and Sbarro launch new eateries focused on customizable pizzas, sandwiches and salads. "We think modern Italian is a growing segment, and we are looking to open in major markets," said Fazoli's CEO Carl Howard. "In the past year, customization has become even more important. People like that they can customize and create their own experience."
