The California cheese market is ever-evolving as new innovations in types and flavors abound. Handmade goat's milk cheese from Pugs Leap Farm in Sonoma County is finding its way onto the menus of such noted restaurants as Cyrus in Healdsburg, Calif., and Soyoung Scanlan of Andante Dairy developed an exclusive cheese for chef Thomas Keller's Per Se establishment in New York.
