Acme chef Mads Refslund forages in Hong Kong

Danish chef Mads Refslund, co-founder of Noma and now chef-owner of New York City's Acme, traveled to Hong Kong to speak at a food and wine festival and had a chance to forage in one of the world's most crowded cities. After sifting through crowded food markets, Refslund went to a small car-free island where he found edible flowers and herbs that he used to create a dish studded with fried fish and sprinkled with dry ice.
