Fruit and vegetable leathers add a touch of luxe

Children aren't the only ones enjoying stretchy fruit and vegetable leathers. Chefs in Michelin-starred restaurants are also adding the dehydrated puree to upscale dishes. Vegetable leathers can be used as a condiment, such as a tomato leather on lobster rolls or a sprinkling of onion leather as a finishing touch to soup.
