Kiwi fruit paste touted by Stratum as fat replacement in baked goods

A kiwi fruit paste is being touted to replace fat, and extend freshness, in baked goods. Stratum Nutrition will debut its ApuraGreen ingredient at the upcoming IFT show. The mildly sweet ingredient can help cut sugar and replace eggs in some products, and has other advantages, including being gluten-free and packed with vitamins C and K, as well as fiber.
