A chocolate maker seeks the sweet spot for growth

Kathy Wiley's artisanal chocolate line, Poco Dolce, was a one-woman show for the first four years. Just when she started feeling confident enough to add staff in 2008, the recession struck and she had to reverse course. Since then, the company has been back in growth mode, but Wiley says she tries to maintain a reasonable pace: "You want to stop ... relax a little and then make the next move."
