The market for gluten-free products is slated to grow significantly during the next five years, but the drivers behind the trend are likely to steer it to a plateau afterward, Pizza Marketplace reports. A segment of people adopting a gluten-free lifestyle aren't celiac sufferers but consumers looking to lose weight on the latest fad diet, said Datamonitor analyst Mark Whalley.
