Fine-dining concepts often launch new flavors and food trends that trickle down to other segments of the industry, said CiCi's Pizza R&D director Rebecca Stone. Some of the latest hot trends on display at the Summer Fancy Food Show earlier this month included kale smoothies and other new twists on frozen treats; innovative ways to use chia, quinoa and other seeds and grains; and globally flavored sauces and meal starters.
