Nutrition adviser: Begin now to reduce sodium levels in school meals

Federal regulations require a gradual decrease in sodium levels in school meals over the next few years. Carol Chong, national nutrition adviser for the Alliance for a Healthier Generation, suggests schools start making changes early. Chong spoke at the School Nutrition Association's 67th Annual National Conference, which took place in Kansas City, Mo., this week. She noted key challenges to compliance include use of cheese and prepackaged foods.
