Peruvian, Korean and Vietnamese cuisine trending on U.S. menus

Americans' appetite for ethnic food continues to grow. In addition to soaring sales of Greek yogurt and hummus, dishes from Peru, Korea and Vietnam are taking off on menus around the country. Peruvian quinoa and ceviche are making their mark on menus, and more eateries are offering Korean staples such as kimchi and kalbi in fusion dishes like pizza and tacos.
