Food trucks make their way to the Midwest

The food truck trend that began in cities on the East and West coasts is starting to flourish in the Midwest, with innovative cuisines aimed at capturing lunchtime and late-night business. As they have in other markets, Midwestern food trucks face some of the same regulatory hurdles and opposition from brick-and-mortar eateries.
