Restaurant companies lag behind other industries when it comes to capitalizing on new-product innovation, a fact that they can overcome by imitating Apple's success, writes Darrel Suderman, founder of the Food Innovation Institute. In a recent workshop, attendees explored ways that restaurants might model their R&D and new product launches after Apple, including creating new-product platforms that allow for launching a host of new dishes within the same category.
