Tennessee restaurateur helps build Knoxville's restaurant reputation

Mahasti Vafaie became a restaurateur, armed with an engineering degree and a passion for food. Vafaie launched Flying Tomato in Knoxville's Market Square in 1990, serving pizza, sandwiches and "health" food to the lunchtime crowd. Since then, the restaurant has been a driving force in revitalizing the city's downtown dining scene.
