CIA graduate Frank Bonanno, chef and owner of several restaurants in Denver, said there are advantages to being well-known as a chef. "It enables you to sell food you might not be able to sell," he said. "More ingredients are accepted, because you're trusted. So they'll eat sweetbreads."
