Chipotle to expand tofu experiment along the West Coast

Chipotle will add a tofu option called "Sofritas" at all of its eateries on the West Coast by the end of July, after successful tests in California that began in February. The filling, made with shredded organic tofu braised with chipotle chilies, roasted poblanos and spices, now accounts for 4% to 5% of total sales in California, the company said.
