Chef promotes cooking to accommodate food allergies

Chef and TV producer Ming Tsai is trying to raise awareness of food allergies, which he says affect about 12 million people in the U.S. "If you own a restaurant, it is absolutely your duty to serve food safely. If you don't know what's in the food you're serving, you shouldn't be in this business," Tsai said. One of the chef's dairy-free creations, which also can altered to accommodate those with soy allergies, is Tofu Greek Salad.
