Author Carolyn Wyman ate at about 50 cheesesteak restaurants and traced the history of the beloved sandwich for her new book, "The Great Philly Cheesesteak Book." Recently, one of the city's top chefs, Georges Perrier, prepared a version for her, which she deemed acceptable because "it's got tradition behind it." Recipe included.
