Small plates and cocktail pairings are perfect for sweltering summer

Hot weather calls for lighter meals and refreshing cocktails such as Social Tap Pub and Grill's salmon ceviche served with a blood orange margarita. "This is when we want less and lighter meals that any other time of year could be an appetizer or first course," said Nathan Martinez, chef and co-owner of the Scottsdale, Ariz., restaurant. "We still want to eat in the summer, but not the same way we do the rest of the year. Nobody wants to finish a meal and feel like they have to take a nap."
