Produce is expected to play bigger role on foodservice menus

About 80% of consumers think restaurants need to feature more fresh produce, and 82% of restaurant operators plan to heed the call and feature fruits and vegetables more prominently in coming years, says Maeve Webster, senior director at Datassential. Local produce, healthy dining and greater diversity of dishes are on the menu this weekend at the Produce Marketing Association Foodservice Conference & Expo.
