Fish tacos are a big catch in California

After becoming a summer favorite with visitors to Mexico, fish tacos have migrated north of the border to become a stable at beach-side taquerias around California. Most chefs make them with cod; some use corn tortillas, others flour. "I think it's all part of the evolution of Mexican cuisine, which has now become our go-to food," said Joe Hargrave, owner of the taqueria Tacolicious.
