Label reading habits not universal

American consumers check fat and calorie content more than anything else on a food label, but in a 38-country survey by ACNielsen, caloric content was identified as the top priority in Latin American countries while preservatives get the most attention in the Asian-Pacific region. Food trends analyst Phil Lempert predicts glycemic index readings on labels will be increasingly heeded "because it takes carbohydrates to the next level, from the amount of carbs a product contains to the impact that the carb level will have on a person's weight and energy."
