Mintel urges confectioners to consider vegetables

A report from Mintel says less than 2% of candy and gum products launched since 2008 contain vegetables. "The absence of vegetables -- especially naturally sweet vegetables such as corn, sweet potato, yam and carrot -- in confectionery provides an option for innovation," said a spokeswoman for the research firm.
