College senior to study gluten protein for celiac clues

Arlington Heights, Ill., native Stephanie Gates will work at the Millikin University lab during her senior year, studying the gluten protein to find a way to stop it from causing celiac disease. She is part of the Society of Chemical Industry Scholars program and her project will be synthesizing peptides and studying how they affect gluten metabolism and celiac disease.
