Nutritionist and chef Rebecca Katz said better nutrition can help improve disease prevention and treatment as well as palliative care, and it may help reduce health care costs. The author of three books on sustainable nourishment, Katz wrote in "The Cancer-Fighting Kitchen" that up to 80% of cancer patients may be malnourished, and she drew upon her experience caring for her father. "If it doesn't taste good, you won't eat. It's not enough to put someone on a really strict diet," she said.
