USDA looks for surfactant-producing yeast

A team of researchers at the U.S. Department of Agriculture are working to produce surfactants from yeast. Scientist Cletus Kurtzman is screening yeast strains to test for their ability to produce sophorolipids. The analysis has turned up three unexpectedly high-producing yeasts.
