Rhode Island restaurant seasons dishes with state flower

Flowers decorate both sides of the house at Providence, R.I.'s, New Rivers bistro, thanks to executive chef Beau Vestal. Vestal decorates his dishes with blooms from several flowers, including the violet. Rhode Island's state flower adds a hint of flavor in savory dishes rather than taking center stage, Vestal says, and the bloom works best in Near Eastern and European-style dishes.
