Study: Lactose-free dairy products need more flavor

The taste of lactose-free dairy products still does not resemble that of regular milk, with the former described as tasting more chalky and less fresh. A study, based on blind taste tests, shows that manufacturers need to do more to produce better-tasting lactose-free foods to gain consumer satisfaction, researchers said.
