Eat Fit NOLA is a new program designed to help New Orleans chefs tailor gourmet dishes to fit the nutritional requirements of the American Heart Association and attract health-conscious diners. "[Chefs] understand that this is something that their customers want -- and that a few simple changes can make for decadent, delicious meals that also help you stay fit," said nutritionist Molly Kimball.
