Studies: Adding fat makes vegetables more nutritious

Recent studies show that some vitamins and cancer-fighting properties in vegetables and fruit are fat-soluble, meaning the body requires fat to absorb the nutrients. Adding avocado or reduced-fat dressing to a salad instead of fat-free can increase levels of carotenoids, lycopene, beta carotene and other nutrients that appear to require the presence of a little fat to be fully absorbed, according to several studies.
